What began in a small room with a few pots, a handful of family recipes and a big dream has grown into something we could not have pictured back then. When Pedro and Mary opened their doors in Fort Walton Beach in 2017, the plan was simple: share the soul of Peru with a new community, one plate at a time.
It caught on faster than anyone expected. Word travelled about the bold flavours, the portions nobody could finish, and a welcome that felt less like being seated and more like being let into someone’s home.
Don Cha has since been named a Best of Florida winner more than once. That recognition matters to us for one reason only: it comes from the people we actually serve.

Peruvian cuisine is a celebration of culture and history, a fusion of Indigenous, Spanish, African, Japanese and Chinese cooking that lands together on one plate. From the bold warmth of aji amarillo to the sharp lime cure of a fresh ceviche, we honour the ingredients and the techniques that were handed to us.
Don Cha was built on hard work, family and the idea of sharing something real. Every dish is the result of long hours, risks taken, and a community that believed in us from the first week.
We do not cut corners and we do not compromise. We cook the way it is meant to be cooked, with pride, with consistency, and with the plain enjoyment of feeding people properly.

Born and raised in Lima, Pedro brings more than recipes to the kitchen. He brings a lifetime of flavour and the stories behind it, blending the techniques he grew up with and a genuine love of looking after people. If you are new to Peruvian food, ask him what to order.
Mary runs the front of house across both dining rooms. If the welcome at Don Cha feels more like arriving at someone’s home than being seated at a restaurant, that is her doing. She is also the one who will remember what you ordered last time.
